- 2-3 tbsp Oil
- 3-4 no. Cloves
- 6-7 no. Black peppercorns
- ¼ tsp Asafoetida
- Prepared Ginger Green chili paste
- 3-4 no. large Tomato, roughly diced
- 1 ½ tsp Degi red chili powder
- ¼ tsp Turmeric powder
- 1 heaped tbsp Coriander powder
- 10-12 no. Almonds (optional)
- 1 cup Curd, beaten
- 1 ½ cups Water
- 1 tbsp Tender Coriander stems, finely chopped
- Salt to taste
- ¼ tsp Sugar
- ¼ cup Water
- Fried paneer
- For Ginger Green Chili Paste
- 1 ½ inch Ginger (peeled & roughly chopped)
- 3 no. Green chillies (less spicy & roughly torn)
- Salt to taste
- Salt to taste
- 1 tbsp Black peppercorns
- 10-12 no. Green cardamom
- 1 tbsp dry Fenugreek leaves
- 1 tbsp Oil
- ½ tbsp Ghee
- 400 gms Paneer, cut diagonally
- Salt to taste
- 1 tsp Degi red chili powder
- Coal
- 2-3 no. Green cardamom
- 1 tsp Ghee
- Coriander sprig
- ¼ tsp Prepared Masala

- In a handi, add oil, once it’s hot, add cloves, black peppercorns
and let it splutter.
- Add asafoetida, prepared ginger green chili paste and sauté it for
2-3 minutes.
- Add tomatoes, degi red chili powder, turmeric powder, coriander
powder and cook it for a while.
- Add almonds, curd and cook for 5-6 minutes on high flame.
- Add water, coriander stems, salt to taste, sugar, cover it with a
lid and cook it for 8-10 minutes on medium flame until cooked well.
- Grind the gravy to a smooth paste with the help of a hand blender,
add water and simmer it for a while.
- Add prepared fried paneer and let it cook for 2-3 minutes.
- Place the coal in a small bowl, add green cardamom, ghee and cover
it with a lid. Keep it aside for 4-5 minutes.
- Transfer it to a serving dish, garnish it with coriander sprig and
sprinkle prepared masala.
- Serve hot with roti.
- For Ginger Green Chili Paste
- In a mortar pestle, add ginger, green chillies, salt to taste and
grind it coarsely.
- Keep it aside for further use.
- In a pan, add salt to taste, black peppercorns, green cardamom and
dry roast it for a while.
- Add dry fenugreek leaves and toss well.
- Transfer it to a mixer grinder jar and grind it to a fine powder.
- Keep it aside for further use.
